Irish Potato Soda Bread

*Great way to use leftover bread!*


1 loaf Irish soda bread (approx. 8 cups) cut into cubes

2 cups heavy cream

2 cans coconut milk (13.5oz ea)

1 cup sugar

1/4 teaspoon ground cinnamon

4 large eggs

Caramel Sauce (optional)


Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with the butter or pan spray.

Whisk together the cream, coconut milk, sugar, cinnamon, and eggs in large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for about 30 minutes, pushing the bread down occasionally so that all the cubes are soaked.

Pour the bread mixture into the prepared baking dish and bake until the custard is set and the top is golden brown, about 45 minutes to 1 hour.

Let cool slightly before serving. Serve warm, at room temperature or cold.

Serve with caramel sauce if desired!
